May I never stop loving all the simple things in life. Like having a romantic dinner in the countryside.
The good weather gave me all that beautiful summer mood. We went for walks in the country side several times lately, when I realized that it is a beautiful environment to have a romantic dinner.
I believe a romantic dinner doesn’t have to be expensive, time consuming or extravagant. In fact, the simple ones are the best, especially those organized in the nature. So, I have brought a mini table for two, a bottle of wine, a raspberry ricotta cake, that I have baked before, and I have incorporated a bunch of wild flowers, I’ve recently picked. The sunset and the nature concert were my favorite ingredients.
You can have a romantic dinner, and listen to the nature concert for free.
The raspberry ricotta cake recipe
The raspberry ricotta cake is my newly favorite summer dessert. This cake is surprisingly easy to prepare and it was love at first bite
I followed the tips and tricks from this YouTube video and below are the ingredients that I used for my version:
- 100-115 g butter, softened
- 75 g brown sugar
- Mix them together until it become creamy
- Add 250 g ricotta
- And 100 g cream (optional)
- Mix them together until it become creamy
- 3 Eggs (added one at the time)
- Lemon zest from 1 organic lemon
- 150-180 plain flour
- 1 teaspoon baking powder
- Mix until incorporated
- 100 g raspberry incorporated in the composition
I baked it for 45-50 min at 180°.
