No matter how much I like traveling, the time spent at home doesn’t compare to anything else.
Since, lately we stayed home more than ever, I added cooking in my daily routine and I love it. I am not a professional cook, but I do my best to achieve great results with minimal effort.
This is why my cooking style must be easy to do, with less time and healthy ingredients.
Spring and the good weather call for more time spending outside, this is why, even when I am staying home, the balcony became our favorite dinner spot.
Salads are perfect for spring and since they are so easy to prepare with just few ingredients which can be used in different combinations, this is the most common menu I cook for dinner: salad, lemonade and pancakes for the dessert.
And below I show you exactly the ingredients I use and how easy is actually to made it.
Salad
The salad is light, healthy and can be prepared is so many combinations. Boiled quail eggs are my favorite and I always find ways to use them in the salad.
Ingredients for 2 persons:
- 1 small bag of mix green salad
- 6 boiled quail eggs
- olives
- cherry tomatoes
- 1 pepper
- olive oil
Lemonade
Lately, I drink lemonade almost daily, since honey and lemons are very rich in vitamins. My favorite lemonade is made with only 3 ingredients:
- lemons
- honey
- strawberries
Pancakes
There are several ways of preparing pancakes, this is the recipe I use for 10 fluffy and tasty pancakes:
10 pancakes, 10 minutes to prepare, 30 minutes to rest, 2 minutes to cook per each pancake
- 2 eggs
- 70g butter
- 50 g sugar
- 250 g flour
- 300 ml milk (or water)
- 1 baking powder
Tip: the butter and the baking powder are essential for the pancakes to be fluffy and tasty. A pancake pan is also better than a normal one. I bought mine recently and I am very happy with the results.
